Cap-Ferret oyster farmers want to win back customers after the poisoning crisis

After a winter season marked by a succession of storms which polluted the waters of the Arcachon Basin, Cap-Ferret oyster farmers want to reassure customers about the quality of their products.

Jean Bouet, discret mais historique travailleur, peut compter sur une clientèle fidèle d’habitués, notamment l’été venu sur sa terrasse de dégustation. Il y a vingt-cinq ans, les ostréiculteurs ont obtenu cette nouvelle forme de vente encadrée en produits et en horaires (production maison, fermeture à 22 heures, entre autres), devenue, au fil des crises du secteur, un revenu essentiel à l’équilibre. Sur 300 professionnels, une centaine propose son spot avec vue sur le Bassin.
Jean Bouet, discreet but historically hardworking, can count on a loyal clientele of regulars, especially in summer on his tasting terrace. Quelques centaines de mètres plus au nord, Hugues Conord apprécie son collègue ( « Tous les deux, on est des vrais »)… qu’il a connu à la maternelle. Mais l’ostréiculteur du village des Jacquets n’est sur ce point pas d’accord : « Ce n’est pas au contribuable de payer pour ce genre d’événement », plaide-t-il. « Les assurances doivent pouvoir couvrir ce genre de risque. Mais les collègues y sont-ils sensibilisés ? » Le professionnel de 48 ans a intégré la perte d’exploitation dans son contrat et a touché une indemnisation en mars.

On est des militants de la cause ostréicole, un métier particulièrement dur. » Hugues préfère être sur l’eau et dans ses parcs, il ne le cache pas. Son épouse Christelle et ses deux enfants Lily et Tom (associés dans l’entreprise) assurent le service d’un client à l’image de celle de la presqu’île : solidaire, gourmande et de plus en plus informée.
